Amala is a popular African delicacy traditionally enjoyed with variety of stews. It is prepared from ground dried yam, popularly known as Elubo (Yam flour).
Elubo is made from yam: a root crop of the family DIOSCOREACEAE. It is rich in potassium, carbohydrate, protein and vitamins A, B-6, C, Magnesium, Iron and Calcium.
